What is masala chai?

“Chai” means tea, while “masala” means a spice blend. In India, masala chai is usually brewed on the stove so the tea and spices can infuse before milk and sweetener are added. It is fuller and more aromatic than a tea bag steeped briefly in hot water.

For a stronger cup, add another half-teaspoon of chai. For a creamier cup, replace some of the water with milk.

How to make authentic masala chai

  1. Bring the water to a boil in a small saucepan.
  2. Add the loose-leaf chai and reduce to a lively simmer for 2 to 3 minutes. This releases the flavour of the black tea and spices.
  3. Add the milk and return the mixture to a gentle simmer for 3 to 4 minutes. Watch the pot closely so the milk does not boil over.
  4. Sweeten to taste, strain into two cups and serve hot.
